You can! Just select a layout to suit the amount of space you need to write in, or leave pages blank if you like.
It's best if you stick to a white background, and bear in mind that the paper has a gloss finish so you may need to use a pen suitable for writing on glossy surfaces (a fine- tipped CD writing pen is ideal).
